Maeve's Carbonara

  • panchetta (can, sub with bacon)

  • parmesan cheese

  • spaghetti

    Grate parmesan cheese into a mixing bowl.

    Add egg and egg .
    egg: 4 (yolks), egg: 2

    Mix until thick. Add spare egg white if needed.

    Boil spaghetti .
    spaghetti: 400 g

    Fry off panchetta - it shrinks a lot so add more than you need (remember to tip off oil).
    panchetta: 1 (can, sub with bacon)

    When the spaghetti is ready, strain it off but keep the water.

    Add the spaghetti back to the hot pan .

    Add two ladles of spaghetti water.

    Add the panchetta and the egg & cheese mixture.

    Keep mixing with a spoon until the mix goes thick.
