1Grate parmesan cheese into a mixing bowl.parmesan cheese: 1

2Add egg and egg .egg: 4 (yolks), egg: 2

3Mix until thick. Add spare egg white if needed.

4Boil spaghetti .spaghetti: 400 g

5Fry off panchetta - it shrinks a lot so add more than you need (remember to tip off oil).panchetta: 1 (can, sub with bacon)

6When the spaghetti is ready, strain it off but keep the water.

7Add the spaghetti back to the hot pan .

8Add two ladles of spaghetti water.

9Add the panchetta and the egg & cheese mixture.

10Keep mixing with a spoon until the mix goes thick.
